I absolutely love to make soup--it's fast and easy, but most importantly HEALTHY!  I always try to avoid processed foods and use fresh produce in my meals. Here are two delicious soup recipes sure to impress:


Carrot Cilantro Soup (or Coriander to you Euros)
Ingredients:
- Olive oil
- 1 onion, finely chopped
- 1 clove of garlic, minced
- 6 carrots, chopped
- 1 liter of vegetable stock
- Bunch of fresh cilantro (coriander)

1. Heat the olive oil in a large saucepan and then add the onions. Cook until soft and then add the garlic.
2. Pour in the stock and add carrots. Cook for 15 minutes until the carrots are soft.
3. Stir in the cilantro and blend until smooth.
4. Season with salt and pepper and add a piece of cilantro as garnish.


Broccoli and Aged Goats Cheese Soup
Ingredients:
- Olive oil
- 1 onion, finely chopped
- 1 clove of garlic, minced
- 1 head of broccoli, roughly chopped
- 1 liter of vegetable stock
- Chunk of aged goat's cheese

1. Heat the olive oil in a large saucepan and then add the onions. Cook until soft and then add the garlic.
2. Pour in the stock and add broccoli. Cook for 10 – 15 minutes until the broccoli is soft.
3. Stir in the cheese and blend until smooth.
4. Season with pepper and serve with a freshly baked roll!
